These are really quick and easy! The more carefully and tightly you pack the filling, the prettier they will look, but if you’re hungry like me, just throw it in and roll it up! You could have these hot or cold, with raw, stir fried, or steamed filling. I didn’t include amounts because the quantities and types of the filling are all according to your taste, and there are many different sauces you could try.
Rolls: Tofu, Carrot, White Cabbage, Bean sprouts, Basil, Rice paper wrappers, Soy Sauce and other seasoning
Satay dipping sauce: Peanut butter, Water, Chilli flakes, Soy sauce, Sesame oil, Rice vinegar
Slice the tofu fairly thinly and shallow fry
Shred the vegetables for the filling
Stir fry them, and season with soy sauce. I also added Thai 7 spice seasoning.
Slice the tofu in to strips and sprinkle with soy sauce. You could marinate it if you weren’t starving like me!
Prepare the sauce by pouring hot water on the peanut butter to melt it, and then adding the rest of the ingredients.
Soak the rice paper wrappers in a shallow dish of water for 30 seconds. Don’t daydream like me and leave them in longer by mistake, they will go to mush! I had to throw 3 in the bin tonight! I was preoccupied thinking about my Halloween costume!… :-)
Place a layer of the fillings towards the top of the roll, fold over the vertical sides and roll towards you horizontally, tucking in the filling, keeping it tight, and sealing the edges.
